The cellar refers to the fact that we will be serving wines that have been accumulating from past tastings at no charge to you. Following a selection of reception wines, each table will be presented with a bag of white wines for the first two courses and reds for the main course. Later, ice wines will accompany the dessert.
Chef Keith Roebuck has planned the following menu to work with the mixed wines and to utilize late summer produce:
Appetizer: Wild mushroom strudel with baby spinach sauce and leek straw.
Fish: Cold poached salmon with a fresh corn salsa and watercress salad.
Main: Roast veal sirloin with brandied foie gras jus, sweet potato mash and market vegetable medley.
Dessert: New York cheesecake with wild berry compote and orange Crème Anglaise.
