The Patriot Restaurant & Brasserie is "a star in an expanding array of fine-dining establishments that celebrate Canadian cuisine" and its chef, David Chrystian, is "…creating Canadian cooking most of us never imagined".
Scott Willows, owner of The Patriot, has worked with Angelo Pavan, winemaker at Cave Spring Cellars and 1999 Ontario Wine Society Winemaker of the year, to come up with a very memorable dining experience at a very special OWS price. Angelo will speak about his wines and why he chose the matchings below. Here is the menu and wines for the evening:

Reception: 2000 Chardonnay Musque
Foie Gras poached in red wine with toast and caramelized pears.
'2000 Off dry Riesling
Alberta Nautrica goat cheese baked on Cookstown greens.
'2000 Sauvignon Blanc
Prune stuffed pork loin, mashed yams, Yukon whiskey cream and Waldorf salad
or
Pan seared Artic Char, smoked bacon, lentils, chanterelles and balsamic glaze.
'1999 Gamay Reserve
Lemon curd tart with fresh fruit.
'2000 Indian Summer Riesling
